I really like to make cheesy rice and broccoli casserole as a comfort food on occasion. I know that white rice isn’t very healthy so I found this excellent recipe from Closet Cooking that uses quinoa instead. It’s a simple one-dish recipe and satisfies the craving for comfort food. This version is prepared on the stove rather than the oven so it doesn’t take as long to cook.

broccoli cheese quinoa recipeThis recipe is simple because you can cook the broccoli with the quinoa. You can use sharp cheddar rather than medium cheddar if that’s what you prefer.

Servings: makes 4 servings

Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

Ingredients
1 cup quinoa, well rinsed
1 1/2 cups vegetable broth or water
2 cups broccoli, chopped
1 cup cheddar, shredded
salt and pepper to taste

Directions
Bring the quinoa, broth and broccoli to a boil over medium heat, reduce the heat and simmer covered until the broth has been absorbed and the quinoa is tender,about 13-17 minutes.
Mix in the cheese, let it melt and season with salt and pepper.
