egg and avocado toastAvocados are one of my favorite foods ever. I think of them as healthy comfort food because they are a little high in fat but it’s the good-for-you fat. I first tried a variation of avocado toast that consisted of toasted wheat bread topped with olive oil, smashed avocado and a sprinkling of feta cheese. Then I saw this awesome idea where someone topped their avocado toast with an egg. It’s fantastic and takes only about 5 minutes to make! See the recipe below.

You can use gluten free bread if you need to. I like using sprouted grain bread or a wheat sourdough bread from the bakery. You can also use a little bit of coconut oil to cook the egg rather than non-stick cooking spray. Tweak the recipe to suit your taste.

Ingredients
2 eggs
2 slices ciabatta bread, toasted
½ avocado
Salt, pepper and parsley for toppings
1 teaspoon lime juice
Non stick spray
Optional toppings: salsa, tomatoes, purple onions, Parmesan cheese

Instructions

  1. Toast ciabatta bread
  2. Fry eggs in a small skillet over med-high heat with a little non-stick spray (or coconut oil works too!) then top with salt and pepper for taste
  3. Peel avocado and smash it up with the lime juice, salt and pepper
  4. When toast is done, spread avocado evenly on both slices
  5. Top it with the fried eggs and add additional toppings if you so desire
