The lovely Tara Stiles recently released her cookbook called Make Your Own Rules Diet. Her cookbook contains recipes that are both tasty and nutritious. I’m especially fond of her Almond Butter Fudge recipe. It satisfies a sweet tooth but is much better for you than the average fudge. Check the recipe out on the next page.
You can use a different nut butter than almond butter if you prefer. Use raw honey and vegan chocolate if you want to make this recipe vegan. Store leftover fudge in the freezer.
1 cup almond butter
1/4 cup coconut oil (soften it up by sitting it in a bowl of warm water for a few minutes)
1 1/2 Tablespoons raw honey (works with honey for strict vegans or if you are just not into the honey)
1/2 teaspoon fine sea salt
option for dark chocolate chips (a handful is great!)
Mix it all together in a bowl
Pour in a glass dish
Freeze for an hour
Cut up in squares and enjoy!
